The client for this project is the head chef of the fine Japanese dining restaurant SU SI CHIAN. He brings not only decades of culinary experience but also a profound understanding of the flavors of mountain and sea ingredients and the techniques needed to express them at their best. Incorporating the aesthetics of French plating, he strives to achieve a harmonious balance between richness and restraint in every dish he presents. CHIAN, this word represents humility - valuing careful, deliberate respect toward people and things, with every action thoughtfully considered rather than flamboyant. This mindset stems from a cultivated sense of taste, refined through personal experience, beautiful and enduring. Moreover, the Chinese character CHIAN chosen by the client evokes the image of cutting strokes - carrying a meaning of humility while inspiring the use of sharp, clean lines within the space. Inspired by the “knife”, the fundamental symbol of precision and balance in Japanese fine dining, the design captures the poise of every cut, embodying years of honed craftsmanship. It draws a parallel with the traditional art of “Ise katagami”, where exquisite detail is achieved in silence, translating the creator’s devotion to beauty into a spatial pursuit of refined minimalism. Taking inspiration from the “kiribori” carving technique of Ise katagami, the store’s pristine white facade features a half-moon carved motif, intuitively showcasing the artistry of knife work like an art installation. The slicing motif continues across the canopy ceiling and full-height windows, symbolizing dishes that may look delicate but are full of deep, layered flavor—prioritizing subtle complexity over showy presentation. The pure, streamlined exterior also sets the restaurant apart from the chaotic visual noise of the surrounding streetscape. Reflecting the owner's calm and embracing culinary spirit, the design deliberately breaks away from the conventional imagery of Japanese fine dining. Rather than defaulting to wood lattices and stone textures, the design employs abstract, minimalist lines to convey the sharp focus and precision of “perfecting a single task,” offering diners an experience that feels intimate yet not isolating, refined yet unconstrained.
